Following a two-week dry dock in Portland, Oregon, Princess Cruises’ Sapphire Princess has returned to service with a refreshed look and two new culinary experiences that are sure to delight guests: Makoto Ocean and Crown Grill, both opening to passengers on November 16, 2025.
The 115,875-ton ship, which accommodates 2,670 guests, received general refurbishments and enhancements during her stay in dry dock. But the headline upgrades are the addition of these two specialty restaurants — part of Princess Cruises’ ongoing commitment to elevating its onboard dining experiences fleetwide.
A Taste of Japan at Sea: Makoto Ocean
After debuting on Sun Princess and Star Princess, Makoto Ocean brings the acclaimed craftsmanship of Chef Makoto Okuwa to Sapphire Princess. Replacing the former Internet Café on Deck 7, this new venue offers Edomae-style sushi with a creative, modern twist.
Guests can expect signature dishes such as truffle salmon, snow crab temaki, and toro tartare, complemented by handcrafted cocktails like the Genmai Negroni — a refined Japanese spin on the classic — and Kodai No Hana, blending yuzu and Doburoku, an ancient sake.
“Makoto Ocean represents a blend of Japanese artistry and contemporary flavor that aligns perfectly with our future deployment in Asia,” said Sami Kohen, Vice President of Food and Beverage for Princess Cruises.
A Classic Favorite Returns: Crown Grill
The Crown Grill, one of Princess Cruises’ most beloved specialty restaurants, has taken over the former Savoy Dining Room on Deck 5. Known for serving premium aged beef, chops, and fresh seafood, Crown Grill has been repeatedly recognized as one of the “Best Cruise Ship Steakhouses at Sea.”
With its warm, elegant décor and attentive service, Crown Grill continues to embody the line’s signature approach to elevated yet approachable fine dining.
Both restaurants carry a $60 per person cover charge and are included for guests who book the Princess Premier package, which provides unlimited specialty dining.
Looking Ahead: Sapphire Princess’ Global Itinerary
Fresh from her revitalization, Sapphire Princess will first sail a Mexican Riviera voyage before repositioning to South America for a series of South America and Antarctica cruises through early 2026.
In spring and summer 2026, she will spend the season sailing the Mediterranean and Northern Europe, followed by Canada/New England itineraries in autumn.
Then in March 2027, history will be made as Sapphire Princess reunites with her sister ship, Diamond Princess, for the first time in Japan. Both Japanese-built ships will sail from the Tokyo region, marking Princess Cruises’ most extensive Japan season ever, running from March through December 2027.
